Ingredients

  • 1 16 oz pacakge bow tie pasta
  • 2 tablespoons olive oil
  • 1 pound sweet italian sausage, casings removed and crumbled
  • ½ teaspoons red pepper flakes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 14.5 oz cans Italian diced tomatoes
  • 1 ½ cups heavy cream
  • ½ teaspoons salt
  • ½ cup grated parmesan
  • 3 tablespoons fresh basil, chopped

Instructions

  • Bring a large pot of salted water to a boil. Cook the bow tie pasta to al dente according to package directions.
Drain, but don't rinse. The starch from the pasta will help to thicken the sauce.
  • Heat the oil in a large, deep skillet over medium high heat. Once the oil starts to shimmer, add the sausage and pepper flakes. Cook until the sausage is evenly browned. Stir in the onions and garlic, and cook until the onion are tender.
  • Stir in the tomatoes, cream and salt. Simmer for about 8 minutes and then add the pasta and stir well to combine. Let the pasta cook in the sauce for another 3-5 minutes or until it has thickend.
  • Add the fresh basil and parmesan cheese. Combine well. Serve imediately.

Notes

  • Reheats well. Add a splash of cream or water if it doesn't seem creamy enough.
