Easy Italian Sausage Bow Tie Pasta Recipe for Two

This scaled-down version still has all the creamy tomato goodness of the original. A little sausage goes a long way here, and the leftovers stretch perfectly into pizza night.

Ingredients
  

  • ½ pound bow tie pasta
  • 1 tablespoon olive oil
  • ½ pound sweet Italian sausage casings removed and crumbled
  • ⅛–¼ teaspoon teaspoon red pepper flakes
  • ½ medium onion diced
  • 1–2 cloves garlic minced
  • 1 14.5 oz can Italian diced tomatoes
  • ¾ cup heavy cream
  • ¼ teaspoon salt
  • ¼ cup grated Parmesan
  • tablespoons chopped fresh basil

Instructions
 

  • Bring a pot of salted water to a boil. Cook pasta to al dente according to package directions.
  • Drain, but don’t rinse.
  • Heat olive oil in a large skillet over medium-high heat. Add sausage and red pepper flakes; cook until browned.
  • Stir in onion and garlic; sauté until softened.
  • Add tomatoes, cream, and salt. Simmer about 8 minutes.
  • Add cooked pasta and toss to coat; let it cook 3–5 minutes to thicken.
  • Stir in Parmesan and fresh basil. Serve immediately.
