Green Chile Pulled Pork Enchilada Casserole

This creamy Green Chile Enchilada Casserole is layered with corn tortillas, shredded chicken, roasted salsa verde, Hatch green chiles, sour cream, and plenty of melted Colby Jack cheese. It's an easy make-ahead dinner that's just as delicious the next day.

Ingredients
  

Sauce

  • 1 tablespoon olive oil
  • ½ cup diced red onion
  • 3 cloves garlic minced
  • 2 cups Roasted Salsa Verde Recipe in the post
  • ½ cup chopped roasted Hatch green chiles or one 4-ounce can diced Hatch green chiles
  • 1 cup sour cream
  • ½ teaspoon kosher salt or to taste
  • ¼ teaspoon black pepper or to taste

Casserole

  • 12 corn tortillas
  • 3 cups shredded cooked chicken
  • 3 cups shredded Colby Jack cheese divided
  • Chopped fresh cilantro for garnish (optional)

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a 9x9-inch baking dish.
  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened and translucent, about 4 to 5 minutes. Stir in the garlic and cook for 30 seconds, just until fragrant.
  • Reduce the heat to low and stir in the roasted salsa verde, sour cream, and Hatch green chiles. Stir until the sauce is smooth and creamy, then let it simmer gently for 2 to 3 minutes, stirring occasionally. Taste and season with salt and pepper, if needed.
  • Spread a thin layer of the sauce over the bottom of the prepared baking dish.
  • Arrange one-third of the corn tortillas over the sauce, tearing them into large pieces as needed to completely cover the bottom of the dish.
  • Top with one-third of the shredded chicken, one-third of the sauce, and one-third of the shredded Colby Jack cheese.
  • Repeat the layers two more times, ending with the remaining cheese on top.
  • Cover the baking dish tightly with aluminum foil and bake for 30 minutes.
  • Remove the foil and continue baking for 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden around the edges.
  • Let the casserole rest for 10 minutes before serving. Garnish with chopped fresh cilantro, if desired.
