- Hatch diced green chiles - Fresh roasted Hatch green chiles are my first choice when they're in season. Roast, peel, and chop them yourself for the best flavor. When Hatch season is over, a 4-ounce can of diced Hatch green chiles is a convenient substitute that still makes a delicious casserole.
- Sour cream - Balances the brightness of the salsa verde and creates the creamy sauce that holds all the layers together.
- Red onion - Adds a little sweetness and depth of flavor after it's sautéed. Yellow onion can be substituted if needed.
