If you're a fan of sweet and spicy snacks, then candied jalapeños (aka Cowboy Candy) should definitely make it onto your recipe list. This homemade version of sweet jalapeños will add a pop of flavor to your meals or make the perfect appetizer for any gathering.

What is Cowboy Candy?

Cowboy candy refers to candied jalapeños - jalapeño slices that are simmered in a sugary syrup with a hint of spice, creating a sweet-and-spicy combination that's irresistible. With fresh peppers and a few simple ingredients, you can make a homemade version that rivals Trader Joe's Hot and Sweet Jalapeños Recipe or any store-bought jar. 


Let's Gather Up the Ingredients

Organizing all of your ingredients ahead of time not only streamlines the cooking process but also ensures you have everything required to complete the dish successfully. You can find the exact ingredient amounts in the recipe card below.

  • Fresh peppers (jalapeños, of course!)

  • Sugar- This recipe calls for white granulated sugar, but I have also used brown sugar with great success.

  • Apple cider vinegar- White vinegar can be substituted.

  • Garlic- I like to use fresh garlic cloves in this recipe, but you could substitute garlic powder. 

  • Celery seed- Adds a subtle, earthy flavor with a hint of bitterness that balances the sweetness of the syrup in cowboy candy.

  • Turmeric- Not only is turmeric good for you, but it adds a beautiful golden color to these pickled peppers.

  • Pepper flakes (optional for extra heat)

Now Let's Get Cooking

Slice the Peppers: Start by slicing your fresh jalapeños into ¼ inch slices. Make sure to wear gloves if you don't want your hands to feel the burn later! Once sliced, set the jalapeno slices aside.

Slice the Garlic: Slice the garlic thinly and set aside with the peppers.

Prepare the Syrup: In a saucepan, combine sugar, apple cider vinegar, celery seed, turmeric, and a pinch of salt. Bring the mixture to a full rolling boil and stir to ensure everything is well combined and the sugar has completely dissolved.

Cook the Jalapeño Slices: Add your sliced peppers and garlic into the syrup. Reduce the heat to medium-low and let them simmer for 4-5 minutes, allowing the jalapeños to absorb the sweetness.

Once the peppers have softened, use a slotted spoon to carefully remove the candied jalapenos from the syrup.

Crank the heat back up and boil the syrup for approximately 6 minutes.

Store and Let It Cool: Spoon the candied jalapeño slices into half-pint jars. Carefully pour the syrup into the jars with the peppers.

Wipe the rims of the jars with a damp paper towel, allow to cool, and then screw on the lids.

Allow the jars to cool to room temperature. Refrigerate for at least 1-2 weeks for optimal flavor.

These quick, sweet snacks will keep for up to 3 months, although they rarely last that long! The flavors continue to develop as the peppers marinate in the syrup. 


Ways to Enjoy Cowboy Candy

Enjoy them with just about anything!

  • These candied jalapeños are perfect on burgers, hot dogs, or sandwiches. 
  • They make an easy appetizer paired with cream cheese and crackers. 
  • Toss them on nachos, potato salad, and casseroles. 
  • For a fun twist, try them in cocktails as a unique alternative to olives!

1. How long do candied jalapeños last? 

Candied jalapeños will keep in the refrigerator for up to 3 months. Just make sure they're stored in a sealed jar to preserve their freshness.

2. Can I make cowboy candy with other types of peppers? 

Absolutely! While jalapeños are the traditional choice, you can experiment with other peppers like serranos or even sweet peppers for a milder version.

3. Can I adjust the sweetness or heat of the cowboy candy? 

Yes! To make your candied jalapeños less sweet, reduce the sugar in the syrup. For more heat, leave the seeds in the peppers or add extra chili flakes to the syrup.

4. Do I need to process the jars in a water bath? 

For short-term storage in the fridge (up to 3 months), you don't need to process the jars in a water bath. However, if you want to store them long-term at room temperature, a water bath canning method is recommended.

5. Can I make a smaller batch of cowboy candy? 

Of course! You can easily adjust the recipe to make a smaller batch, just be sure to maintain the correct ratio of sugar and vinegar to achieve the right balance of sweetness and tang.


Tips for the Best Cowboy Candy

  • Use Fresh Peppers: Fresh jalapeños make all the difference when creating the perfect texture for your candied jalapeños. Avoid using peppers that have started to soften or wrinkle.
  • Adjust Heat Level: If you prefer less heat, remove the seeds before slicing the peppers. If you love a bit more spice, leave the seeds in for an extra kick!
  • Room Temperature Storage: After cooking, always let your jars cool to room temperature before sealing them. This helps prevent any condensation that can affect the shelf life.

Easy Candied Jalapeños | Cowboy Candy

These sweet and spicy candied jalapeños are a flavor bomb! With just the right balance of heat and sweetness, they're perfect for adding a kick to burgers, sandwiches, tacos, or even charcuterie boards. Made with fresh jalapeños and a quick homemade syrup, this recipe is super simple and great for canning or storing in the fridge.

Ingredients
  

  • 2 pounds fresh jalapeños
  • 6 garlic cloves sliced thin
  • 2 cups granulated sugar
  • ⅔ cup apple cider vinegar
  • 1 teaspoon celery seed
  • ½ teaspoon turmeric
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon salt

Instructions
