Missouri might not be the first state that comes to mind when you think about food, but spend a little time exploring its culinary landscape, and you'll realize it has some serious flavor.

Sitting right at the heart of America, Missouri's food scene is a beautiful blend of Midwestern comfort, Southern soul, and a hint of barbecue mastery that rivals any of the country's top contenders.

Whether you're in bustling St. Louis, historic Kansas City, or one of its charming small towns, Missouri serves up some iconic eats worth trying.

Kansas City BBQ - A Slow-Smoked Legacy

When people talk about Missouri food, barbecue is almost always the first thing that comes up. Kansas City is famous for its slow-smoked meats, thick-cut burnt ends, and signature tomato-based barbecue sauce with a touch of molasses sweetness. The magic happens in low-and-slow smoking over hickory wood, creating tender, flavorful meat that practically melts in your mouth.

St. Louis-Style Ribs - A Barbecue Classic

While Kansas City may be known for burnt ends, St. Louis has its own barbecue specialty-St. Louis-style ribs. These ribs are trimmed to remove the cartilage and gristle, creating a uniform rack that cooks evenly and is packed with flavor. Another St. Louis invention, toasted ravioli is the ultimate comfort food. These crispy, breaded pasta pockets are said to have originated in the Italian neighborhood known as The Hill. They're deep-fried until golden, sprinkled with Parmesan, and served with marinara for dipping.

Gooey Butter Cake - A Sweet Slice of Missouri

Missouri has its fair share of indulgent treats, but nothing quite compares to the ooey, gooey delight of Gooey Butter Cake. This St. Louis-born dessert has a dense, chewy base topped with a buttery, sugary filling that's almost custard-like in texture. It's rich, sweet, and impossible to resist.

Springfield-Style Cashew Chicken - A Chinese-American Classic

Missouri may not be known for its Chinese food, but Springfield, Missouri, has a claim to fame with its unique take on cashew chicken.

Created in the 1960s by chef David Leong, Springfield-style cashew chicken is deep-fried instead of stir-fried, then smothered in a rich, savory brown sauce and topped with cashews and green onions.
