Lately, I've been thinking a lot about how much food goes to waste in our home - not just scraps, but full portions of meals that never get eaten.
I realized I was still cooking like I was feeding a family of four, but now that it's mostly just Ken and me, we simply can't eat that much.
Cleaning out the fridge at the end of the week had become something I dreaded!
When we're traveling in the RV, space is limited - especially in the refrigerator. Every extra container of leftovers takes up room we don't have, and between rising grocery costs and the amount of food I was tossing each week, I knew I needed a better system.
Don't get me wrong - I still love cooking for the kids when they come home on the weekend. That's when I go all out and make big, family-style meals. But during the week, it's a different story.
Most nights, it's just the two of us, and I've learned to be more intentional about what I buy and how I plan our meals.
Cooking for two is less about cutting recipes in half and more about cooking with intention.
When I started Our Table for Two, it wasn't just about smaller portions - it was about slowing down, cooking thoughtfully, and finding joy in simple, everyday meals.
