These Beef & Cheese Stuffed Peppers are the perfect dinner when you're craving something hearty but simple. Tender bell peppers are filled with a seasoned mix of ground beef, rice, marinara sauce, and melted cheese, then baked until golden and bubbling. It's a great way to stretch half a pound of beef into a complete meal, and the same marinara sauce makes another appearance later in the week with the baked ravioli - different meals, same smart use of ingredients.

I'm not a fan of goat cheese. Would blue cheese or gorgonzolla work in the recipes at the top?

I love blue cheese, but I don't think it would give the dish the right texture. Cream cheese would work in place of the goat cheese though. OOOH or Boursin would be an excellent substitution. I think I am going to try that next time. https://www.boursin.com/product/garlic-fine-herbs/
