Lately, I've been thinking a lot about how much food goes to waste in our home - not just scraps, but full portions of meals that never get eaten.
I realized I was still cooking like I was feeding a family of four, but now that it's mostly just Ken and me, we simply can't eat that much.
Cleaning out the fridge at the end of the week had become something I dreaded!
When we're traveling in the RV, space is limited - especially in the refrigerator. Every extra container of leftovers takes up room we don't have, and between rising grocery costs and the amount of food I was tossing each week, I knew I needed a better system.
Don't get me wrong - I still love cooking for the kids when they come home on the weekend. That's when I go all out and make big, family-style meals. But during the week, it's a different story.
Most nights, it's just the two of us, and I've learned to be more intentional about what I buy and how I plan our meals.
Cooking for two is less about cutting recipes in half and more about cooking with intention.
When I started Table for Two, it wasn't just about smaller portions - it was about slowing down, cooking thoughtfully, and finding joy in simple, everyday meals.
Whether you're traveling in an RV, cooking in a quiet kitchen at home, or learning to make the most of your ingredients, I hope these menus help you rediscover the pleasure of cooking with purpose.

Table for Two
A weekly series of menus designed to help couples, empty nesters, and small households cook smarter, waste less, and still eat well.
Each week features five dinners that share ingredients in creative ways, so you can make the most of what you buy without ever feeling like you're eating leftovers.
Instead of big-batch meal prep, I focus on ingredient prep - buying what I need for the week and planning recipes that build on each other.
It's helped me stretch every grocery dollar, cut back on waste, and truly enjoy cooking for two again.
Each new Table for Two menu includes:
- Five dinners with overlapping ingredients (without repeating flavors)
- A shared ingredient grocery list
- Scaled-down portions perfect for smaller kitchens or RV cooking
- A free mini eBook to download and keep
I'll be adding a new menu every week - different recipes, same practical approach - so you can cook with intention, spend less, and enjoy more.
